It's Zucchini Time

It's summertime here on the Fable Porch Farm and you know what that means....
FRESH ORGANIC GOODNESS coming out of our garden daily.

And every summer when these beauties start coming in, I make my famous zucchini bread.
Today, I would like to share that recipe with you. 

What You Need

1 1/2 cups of all purpose flour
1 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/4 tsp ground nutmeg
1 cup sugar
1 cup finely shredded zucchini
1/4 cup cooking oil
1 egg
1/4 tsp lemon zest
1/2 cup of chopped almonds, pecans, or walnuts (optional)


What You Gotta Do

1- Preheat your oven to 350°
2- Grease the bottom and sides of a loaf pan and set aside
3- Mix flour, cinnamon, baking soda, baking powder lemon zest, salt and nutmeg
together in a medium size mixing bowl and set aside
4- Mix sugar, egg, oil and zucchini together in a medium mixing bowl
5- Add zucchini mixture to dry mixture and stir just until moistened (batter
will be lumpy) 
6- Fold in nuts (nuts are totally optional. I personally like it either way)
7- Spoon batter in prepared pan and bake for 50 to 60 minutes or until
a wooden tooth pick inserted  near the center comes out clean

Oh yea! It's lumpy!

Cool in the pan for 10 minutes and then remove from the pan. Cool completely
on a wire rack. The most unfortunate thing you gotta do is wrap it up
and store overnight. I know, but it's totally worth the wait. I love having
my zucchini bread with a freshly brewed cup of coffee.
